Shrimp Curry

6 Cups of Water

1 1/4 pound fresh shrimp 16-20 peeled and deveined

vegetable cooking spray

2 teaspoons margarine

1/2 cup chopped onion

3 tablespoons flour

1 tablespoon curry powder

1 cup skim milk

1/4 teaspoon chopped green onion]

1/4 teaspoon salt

2 cups cooked long grain rice

1/4 cup raisins

1 tablespoon cocount

Boil shrimp for 4 minutes or until done.

In a large skillet, add cooking spray and margarine.  Cook over medium heat.  Add onion.  Saute until tender, combine flour and curry. Add milk, stir constantly, until thickened. Add lemon juice and salt.  Add shrimp and cook thoroughly.  Serve over rice.
